If there was one thing I missed when going vegan, it was penne a la vodka. I didn't think ANYTHING could replace the heavy cream and romano cheese. So, I set out to do it. And do it, I did. The husband is pleased, and he sopped up the rest of the sauce on his plate with no less than 42 slices of bread. There are probably 4 billion vegan vodka recipes out there. But remember I am an Italian girl from Long Island, and I know that in order to make myself happy, I had to make it taste like the "real thing." This is going to be one of my tester recipes, so it's a secret until my cookbook project hits shelves!
